Toad in the Hole

 
     
 

Description

Dishes like Toad in the Hole appeared in print as early as 1762, where it was described as a "vulgar" name for a "small piece of beef baked in a large pudding". Toad in the Hole was originally created as a way to stretch out meat in poor households. These days it is still a delicious meal eaten by everyone.

Ingredients

  • 8 sausages
  • 110g p flour
  • Pinch salt
  • 2 eggs (beaten)
  • 300 ml milk
  • Dried herbs/1 tsp mustard powder optional
  • Bacon (optional- 1 rasher per sausage)
 
 

Method

220c/ gas 7
(If using bacon wrap each sausage in a rasher)
Place sausages in a shallow greased ovenproof dish
Cook for 10 mins
Mix flour and salt in a bowl
If using mustard powder or herbs they should be added and mixed
Make a well and add eggs
Stir and add milk gradually till flour mixed
Add remaining milk and whisk
Pour batter over partly cooked sausages
Cook for 30 mins till batter golden and well risen
