  • 1 Large Onion
  • 3 Leeks
  • 2 Large Potatoes
  • Garlic
  • Salt
  • Pepper
  • Stock Cube
  • Rape Seed oil
  • Boiling Water


Finely chop the Onion to your required size
Heat Oil in pan
Add finely chopped onion and garlic
Braise until softened
Finely chop the leeks and add to pan
Braise for 5 mins
Meanwhile peel and chop potatoes into small chunks
Add to pan
Add 500ml Vegetable stock
Stir well
Cover and simmer for 40 mins Add Salt and Pepper to taste
Serve either chunky or blended with bread
