Orange and Almond Cake

Beautiful Orange and Almond Cake by David from Scotland

Ingredients

  • 3 Large Oranges
  • 6 Eggs
  • 250g Castor Sugar
  • 1 Tsp Baking Powder
  • 250g Ground Almonds
 
 

Method

Wash and boil two of the oranges whole for 90 mins or until they are very soft.
Let them cool then cut them open
Remove the pips
Puree the oranges, including the peels, in a food processor

Beat the eggs with the sugar in a large bowl
Add the baking powder and almonds and mix well
Then mix thoroughly with the orange puree and pour into a buttered and floured, non stick cake tin,(if you have one use a cake tin with a removeable base)
Bake at 170C fan/gas mark 5 for an hour. Let it cool before turning out onto cake rack
Decorate with slices of the third orange
Allow to cool before eating
