Rainbow Peppers, a very simple and quick to make dish from Jennifer in Scotland

  • 1 red pepper ( sliced)
  • 1 orange pepper (sliced)
  • 1 yellow pepper ( sliced)
  • Olive oil to cook
  • Balsamic vinegar
  • 1 garlic clove (crushed) – optional


Heat olive oil & all peppers & garlic if using
Cook on fairly high heat till peppers start to colour
Immediately add a splash of balsmaci vinegar & stir to let it absorb into peppers
Vary to taste
Serve alongside pasta or can be eaten cold.
